SCOTLAND’S first specialist wine venue modelled on traditional Italian enotecas will open next week, offering visitors the chance to sample some of the world’s finest and rarest vintages.
The brainchild of local entrepreneur Tony Crolla, Divino Enoteca will serve an impressive selection of fine wines from hi-tech dispensing machines specially-designed to preserve the flavour and body.
Four state-of-the-art dispensers will offer around 65 wines by the glass, adding a technological twist to the traditional concept of enotecas which are popular across the wine growing regions of rural Italy.
Tony Crolla, owner of Divino Enoteca, said: “This has been a dream of mine for a long time now and it’s fantastic to finally see it realised in Edinburgh.
“We at Divino Enoteca want to share our love and knowledge of wine with the people of Edinburgh and give them a chance to sample some of the world’s fine and rare vintages.”
Divino Enoteca will boast one of the most extensive wine lists in Scotland, featuring renowned names such as Biferno Rossa Reserva, Marche Passetto and Toscana Masseto.
Tony added: “Because we are investing in this dispensing technology, our customers will be able to sample wines by the glass. That means no-one will ever have to pay out for an expensive bottle of wine only to find it is not to their taste.
“The technology is amazing. When you are dealing with the finest quality wines it is crucial they are served at the optimum temperature and these machines are finely calibrated to preserve the flavour and body.”
As well as fine wines, head sommelier, Sebastiano Ingaliso, has painstakingly researched every wine on the list to provide customers with a wealth of information about each one – including details of the grape and the region.
