Albert Roux announces the launch of latest Chez Roux restaurant in Scotland
ONE of Scotland’s most remote hotels, Inver Lodge in Lochinver, is undergoing a major transformation that will include Albert Roux’s third Chez Roux restaurant in Scotland.
The hotel owned by Mr Robin Vestey will reopen in April this year after a six month refurbishment. Located in one of the most secluded spots in Scotland, Inver Lodge Hotel is drawing on the expertise of the team from one of Scotland’s finest luxury hotels, Inverlochy Castle in Fort William.
Since the hotel’s closure in October 2009, a seven-strong team of specialists, including international interior designer Kathleen Fraser, is set to transform the hotel into a luxury retreat complete with new luxury suites, interiors and furnishings. The restaurant will be transformed into a Chez Roux, following the concepts success at Rocpool Reserve in Inverness.
Lochinver, a small fishing village in the Scottish Highlands, will be the perfect retreat for visitors interested in fishing, walking and relaxing. Set in unspoilt wilderness, Inver Lodge Hotel is an exclusive hideaway in the Scottish Highlands, popular with fishing and walking enthusiasts.
Mr Roux, a keen angler himself, said: “I have chosen Inver Lodge Hotel in Lochinver as the new location for my latest Chez Roux restaurant as it is one of the most peaceful places in northern Scotland.
“Chez Roux is committed to using locally sourced Scottish produce, Inver Lodge Hotel is in a unique position as they will have daily access to some of the freshest fish and finest ingredients. Our new menu will focus on traditional French homemade cooking using the best Scottish ingredients that we have readily available here in Lochinver.”
10,800 tourists come to Lochinver every year to experience the tranquility and discover the raw natural beauty of Assynt which is dominated by the spectacular mountain scenery.
Mr Vestey, who is funding the new venture, said: “My family has a long history here in Lochinver and we are committed to the economic prosperity of the area.

Mr Nicolas Gorton, general manager of Inver Lodge Hotel has run the hotel for over twenty-two years since its opening in 1988 and will continue to manage the refurbished hotel when it reopens to the public in April.
